Gingami No.3 steel (commonly called G3) is a premium stainless steel produced by Hitachi Metals. With high carbon, high chromium, plus vanadium and molybdenum, it delivers excellent edge retention, hardness, wear resistance, and corrosion resistance. It is widely used in high-grade chef knives, slicers, and vegetable knives.
