Brand Introduction
Yoshinari was founded in Toyama Prefecture, Japan, with over 90 years of history.
Since its establishment in 1933 (Showa 8), Yoshinari has been dedicated to crafting high-quality knives with refined craftsmanship.
The character “佑” (Yū) in its name represents “the right-hand side,” symbolizing its vision of becoming a chef’s indispensable right-hand tool in every cooking process.
Material Introduction
VG10 Steel — Composition: Carbon (C) ≈1.0%, Chromium (Cr) ≈15.0%, Vanadium (V) ≈0.2–0.3%, Molybdenum (Mo) ≈1.0%, Cobalt (Co) ≈1.5%.
This blend provides an excellent balance of hardness and corrosion resistance.
The addition of cobalt and vanadium further enhances wear resistance and edge retention.
With hardness around HRC 60–62, VG10 maintains sharpness for long periods while keeping good toughness.
Its high chromium content gives it outstanding corrosion resistance, ideal for humid and acidic kitchen environments.
Knife Model Introduction
Yanagiba (Sashimi Knife): A long, narrow knife specifically designed for slicing sashimi and raw fish.
It features an extremely sharp single bevel edge, allowing precise, smooth cuts that preserve the texture and flavor of the fish.
