“Hatsukokoro” comes from the Japanese proverb meaning “never forget your original intention.”
The name adopts the softer kun-yomi reading of “初心,” symbolizing sincerity and the drive to create products that continue to bring freshness and surprise to customers.
Material Introduction
V-Toku-2 is a high-purity alloy carbon steel developed by Takefu Special Steel, based on Hitachi’s classic Blue Paper #2.
It closely resembles Blue #2 in composition but includes trace amounts of tungsten (W) and vanadium (V), refined through advanced smelting technology to reduce impurities and create a finer grain structure.

* High carbon content (≈1.05%), capable of reaching HRC 62–64 hardness with excellent quenching properties.
* The addition of tungsten and vanadium forms fine carbides, enhancing wear resistance and edge retention compared to Blue #2.

* Superior machinability: stable heat treatment and better grindability than many high-hardness steels.

Knife Model Introduction
The Sujihiki knife is primarily used for trimming meat and removing sinew.
Its long, thin blade allows smooth separation between meat and connective tissue, and it is also commonly used for slicing large cuts of fish or sushi ingredients (such as tuna akami).
It serves as a versatile hybrid between the Gyuto and Yanagiba knives.
