Nakagawa Cutlery is a forge founded by Satoshi Nakagawa, a craftsman trained under Kenichi Shiraki—one of Sakai’s most respected smiths. With over 16 years of intensive training, Nakagawa inherited the Shiraki-style craftsmanship and launched his own workshop in 2021. His works span across a wide range of steels including Shirogami, Aogami, Ginsan, VG10, and SG2, exhibiting deep technical mastery.
Steel Introduction:
VG10 is a high-carbon stainless steel known for its excellent edge retention, corrosion resistance, and durability. With a hardness of HRC 60–62, it strikes a balance between sharpness and toughness, making it ideal for kitchen use under humid and acidic conditions.
Knife Type Introduction:
The Kiritsuke Yanagiba is a hybrid design combining the pointed tip of a Kiritsuke with the long, narrow blade of a Yanagiba. It is single-beveled and ideal for slicing sashimi or sushi-grade fish with clean, uninterrupted strokes to preserve the texture and presentation of the fish.
