⭕️Takeshi Saji: A master bladesmith from Echizen, Fukui, Japan, and a third-generation successor of Saji Hamono. Initially known for hunting and outdoor knives with a bold and rugged style, he later integrated traditional forging techniques with innovative designs. His knives are regarded as both functional tools and works of art, produced in limited quantities and highly sought after by collectors. The legacy is currently continued by his son-in-law, Kazuo Nomura.
Material Introduction:
⭕️VG10-W: Produced by Takefu Special Steel, this upgraded version of VG10 includes tungsten (W), forming fine and hard carbides that significantly enhance wear resistance and edge retention. It also improves thermal stability, allowing hardness above HRC61 after heat treatment. Compared to standard VG10, it maintains similar corrosion resistance while improving durability by about 20% and cutting performance by about 25%, making it ideal for high-end kitchen knives and demanding applications.
Knife Model Introduction:
⭕️Sujihiki: Primarily used for slicing meat and removing sinew, featuring a long and narrow blade that glides easily between meat and connective tissue for clean separation. It is also ideal for slicing large portions of fish for sushi and sashimi, such as tuna, and can be considered a versatile option between a gyuto and a yanagiba.
