⭕️AUS-10: 由日本愛知鋼材公司生產的鋼材。由於高碳含量，AUS-10是AUS系列中最強的鋼材,加入了鎳、錳、矽，以改善材料的延展性和韌性,釩、鉻和鉬的組合還使鋼材具有耐腐蝕性和耐磨損性,因此lAUS-10堅固、相對堅韌，耐磨損且不易生鏽。

⭕️出刃:(又名雞肉刀)是單面開刃，刀身較厚重類似中式剁刀，主要用來開魚，把魚肉從骨頭上卸下，也常用來處理雞包括骨頭但豬骨排骨較硬的骨頭建議還是用台式剁刀~
