Brand Introduction:
⭕️Mizuno Tanrenjo: Founded in Meiji 5 (1872), it has 150 years of history and is a long-standing forge in Sakai City. The first generation, Torakichi Mizuno, founded the Minamoto-no-Akitsu brand and began forging samurai swords and kitchen knives.
The second generation, Masanori Mizuno, studied under master swordsmiths Sakurai Masayuki and Morita Masamichi. In Showa 9, he was responsible for the major renovation of Horyu-ji Temple in Nara, forging four protective sickles enshrined on the National Treasure Five-Story Pagoda. Note : It is said that the protective sickles can be replaced once every 200 to 300 years. They were made from old nails collected from Horyu-ji, including nails from 1300 years ago.

The third generation, Sadaaki Mizuno, studied sword forging under the Living National Treasure Teiichi Gassan. In 1981, he exhibited a Honyaki Yanagiba at the National Traditional Crafts Exhibition and the following year became a Sakai Traditional Craftsperson designated by the Japanese government.
The fourth generation, Yasuyuki Mizuno, and his son were received twice by Prince Mikasa in 1952 and 1980. The Prince gave their work extremely high praise and granted the honor of "Tairan" to Mizuno Tanrenjo. Therefore, the back of Mizuno knives bears the "Given Imperial Inspection" mark to show the Imperial family's recognition.
The fifth generation, Jun Mizuno, also possesses extremely high forging skills. The unique Kawazu Choji tempering line is a specialty of the Mizuno family and is favored by many chefs in Japan and overseas.

Steel Introduction:
⭕️Gingami 3: Hitachi Yasugi Silver 3 (Gingami No.3 or G3) is a high-quality stainless steel produced by Hitachi Metals in Japan. This material is characterized by high carbon and chromium content, with specific amounts of vanadium and molybdenum. Its composition provides excellent edge retention, hardness, wear resistance, and corrosion resistance. It is commonly used for high-quality kitchen knives such as chef knives, slicing knives, and vegetable knives.

Knife Model Introduction:
⭕️Sakimaru : A Japanese knife typically used for slicing fish, especially for sushi and sashimi. This knife combines the characteristics of two traditional Japanese knives: Sakimaru (tapered point) and Takohiki (straight long blade). Its unique design makes it ideal for delicate cutting tasks, such as precision slicing of extremely thin fish fillets.
