Material Introduction
VG10 Steel: Composition — Carbon (C): ≈1.0%, Chromium (Cr): ≈15.0%, Vanadium (V): ≈0.2–0.3%, Molybdenum (Mo): ≈1.0%, Cobalt (Co): ≈1.5%.
This composition provides an excellent balance of hardness and corrosion resistance.
The addition of cobalt and vanadium enhances wear resistance and edge retention.
With a hardness of HRC 60–62, VG10 maintains sharpness for extended periods while retaining sufficient toughness.
Its high chromium content grants superb rust resistance, making it ideal for humid or acidic kitchen environments.
Knife Model Introduction
Sujihiki (Fillet Knife): Designed for trimming meat and removing sinew, its long, thin blade easily glides between muscle and tendon for clean separation.
It is also commonly used for slicing large pieces of sashimi or sushi-grade fish (such as tuna akami), serving as a versatile alternative between a gyuto and a yanagiba.
