Brand Introduction:
Takahashi Kusu was founded in 1917 in Sakai, Osaka, a historic hub of Japanese knife craftsmanship. Now operated by its fourth generation, the brand has long been committed to producing and distributing traditional Japanese kitchen knives.
Their premium line "Ittosai Kotetsu" is named after the legendary Edo-period swordsmith Kotetsu, representing unmatched sharpness and artisan craftsmanship. By blending tradition with modern needs, they aim to bring Sakai-forged knives to global kitchens.
Steel Introduction:
VG10 contains approximately 1.0% carbon, 15.0% chromium, 0.2–0.3% vanadium, 1.0% molybdenum, and 1.5% cobalt. This composition provides excellent hardness, corrosion resistance, and edge retention. With HRC 60–62 hardness, it maintains sharpness while retaining toughness—ideal for moist and acidic kitchen environments.
Knife Type Introduction:
The Sakimaru Takohiki blends the pointed tip of a Sakimaru with the straight edge of a Takohiki, creating a versatile and elegant knife ideal for precise slicing of sashimi and sushi-grade fish. It excels in making ultra-thin, clean cuts that preserve the texture and visual presentation of the fish.
