Yoshiaki Saruwatari × A Work of Craftsmanship from Seki, Gifu
From Japan’s famed cutlery town – Seki City in Gifu Prefecture – the “Suiboku Series” is created by renowned bladesmith Yoshiaki Saruwatari, whose brand is Sarukyu (Enkyu), produced by his own workshop CRAFT36 Co., Ltd.
Born into a family of bladesmiths, Yoshiaki Saruwatari grew up in a world of steel and fire.
After many years of training and working as a blade finisher (刃付師), he founded his own workshop CRAFT36 Co., Ltd. in 2011, focusing on the handcrafting, sharpening, and sales of kitchen knives.
Guided by the belief that “a kitchen knife is a sacred tool that connects ingredients and the person who cooks them,” he personally oversees every step – from steel selection, forging, sharpening and adjustment, assembly, and honba-tsuke (final edge setting), all the way to packaging – infusing each knife with the spirit of true craftsmanship.
Steel Introduction:
SG2/R2 powder steel contains:
C 1.25–1.50%, Cr 14–16%, Mo 2–3%, V 1.8–2.5%, W 1.5%.
It offers very high hardness, excellent corrosion resistance, and good toughness.
After proper heat treatment, hardness reaches ≈ HRC 62–64, providing long-lasting sharpness and superior wear resistance.
Knife Model Introduction:
A Sujihiki is designed for trimming meat, removing sinew, and slicing large blocks of fish or sashimi.
Its long, thin blade glides effortlessly between muscle and membrane, functioning as a hybrid between a gyuto and a yanagiba.
