A high-end powder metallurgy steel developed by Hitachi Metals, Ltd., hailed as the "Next-Generation Super Steel of the 21st Century." Its primary composition consists of approximately 3% Carbon and up to 20% Chromium. After heat treatment, it can reach a hardness of HRC 66–67, making it one of the very few steels that can balance ultra-high hardness with practical utility. The high-carbon design grants exceptional sharpness and wear resistance, while the high chromium content ensures superior rust resistance—perfect for demanding professional users who require both cutting performance and corrosion protection.
It features an extremely fine and uniform distribution of grain and carbides, allowing the blade edge to maintain high stability and sharpness over long periods. Although its hardness makes processing and sharpening more challenging, proper techniques and sharpening tools will unlock its peak performance. ZDP-189 is currently one of the most representative ultra-high hardness stainless steels on the market, widely used in high-end kitchen and craft knives.
