Brand Introduction
“Hatsukokoro” comes from the Japanese proverb meaning “never forget your original intention.”
The name uses the soft kun-yomi reading of “初心,” expressing the philosophy of staying true to one’s beliefs and continuously creating products that bring freshness and surprise to customers.
Material Introduction
V-Toku-2 is a high-purity alloy carbon steel developed by Takefu Special Steel as an evolution of Hitachi’s Blue Paper #2 steel.
It closely matches Blue #2 in composition but adds tungsten (W) and vanadium (V) in small quantities, refined through stricter smelting to achieve fewer impurities and finer grain structure.
🌸Features & Performance
* High carbon content (≈1.05%), hardness up to HRC 62–64, excellent quenching property.
* Added tungsten and vanadium promote fine carbide formation, improving wear resistance and edge retention beyond Blue #2.
* Superb cutting ability: allows for thin, precise, and smooth cuts.
* Stable heat treatment and good grindability, better than some other high-hardness steels.
* As a high-carbon alloy steel, it is reactive and should be kept dry and oiled regularly.
Knife Model Introduction
Petty Knife (Fruit Knife): ideal for peeling fruits and vegetables, and for small or detailed cutting tasks.
Its flexibility and maneuverability make it perfect for handling delicate ingredients or performing fine knife work.
