Brand Introduction:
🔰Masamoto Sohonten
Founded in 1872 by Minosuke Matsuzawa I in Tokyo, Masamoto is one of Japan’s oldest and most renowned kitchen knife makers, now run by the fifth generation.
Originally focused on sushi knives, Masamoto gained its reputation at Tokyo’s Tsukiji Market for stable quality and refined craftsmanship. Sushi chefs choose Masamoto for its blend of traditional forging spirit and practicality.
The product line includes Yanagiba, Deba, and Usuba among traditional single-bevel knives, as well as Gyuto and Santoku to meet modern needs. Steels used include Shirogami, Aogami, Gingami No.3, and Molybdenum Vanadium.
Masamoto’s Kappabashi main store has been operating since 1890, a must-visit for professionals and enthusiasts. Despite minimal marketing and limited production, Masamoto remains highly trusted for consistent quality.
Knife Introduction:
⭕Sujihiki: A long, thin slicing knife designed for trimming sinew and membranes from meat. Its slender blade slides easily between muscle and sinew for clean separation. Sujihiki is also commonly used for preparing sushi and sashimi blocks (such as tuna). It serves as a versatile alternative between the Gyuto and Yanagiba.
