“Water-quenching” refers to a rapid cooling method in cold water, transforming the steel into a high-hardness martensitic structure. Though not equivalent to honyaki, this technique enhances edge retention and sharpness.
Shirogami #1 steel has higher carbon content than Shirogami #2, making it harder and sharper. It's considered close to tamahagane and is relatively rare and premium.
