Brand Introduction
Founded in 1955, Tojiro has over 70 years of history. Beginning with the production of its first stainless steel fruit knife, the company aimed to overturn the notion that “stainless steel equals low quality.”
With the mission of creating highly sharp kitchen knives, Tojiro continues to innovate and refine its craftsmanship.
Today, it remains one of the few Japanese brands preserving the traditional spirit of knife-making, with the slogan “More than Sharp,” focusing on delivering professional knives that balance sharpness and comfort.
Located in Tsubame, Niigata Prefecture—Japan’s historical metalworking hub since the Edo period—Tojiro blends traditional craftsmanship with modern industrial technology.
By applying techniques derived from samurai sword forging and advanced press-forging processes, it produces knives of stable quality and high efficiency.
Even in an era of automation, Tojiro believes that only the skill and judgment of artisans can create truly exceptional knives.
Every Tojiro knife embodies the craftsman’s belief that “a knife is a partner” and represents a promise to enhance user experience.
Looking forward, Tojiro continues to uphold tradition and drive innovation, spreading the spirit and precision of “Made in Japan” worldwide.
Material Introduction
VG10 Steel — Composition: Carbon (C) ≈1.0%, Chromium (Cr) ≈15.0%, Vanadium (V) ≈0.2–0.3%, Molybdenum (Mo) ≈1.0%, Cobalt (Co) ≈1.5%.
This combination provides excellent hardness and corrosion resistance.
The addition of cobalt and vanadium improves wear resistance and edge retention.
With hardness between HRC 60–62, VG10 retains sharpness for long periods while maintaining toughness.
Its high chromium content gives it outstanding corrosion resistance, ideal for humid and acidic kitchen conditions.
Knife Model Introduction
The Paring Knife (Fruit Knife) is ideal for peeling fruits and vegetables and performing delicate or precise cuts.
Its small size and agility make it perfect for handling compact ingredients and detailed knife work.
