Brand Introduction:
Ryusen Hamono was founded in 1901 and has a history of over 124 years.
Its origins trace back to the post-war era when the previous generation began working in blade finishing—an essential part of knife production.
The company adheres strictly to traditional craftsmanship, valuing handwork over machinery, and continues to inherit the 700-year wisdom of Echizen forged blades.
With commitment to quality and tradition, Ryusen aims to preserve and innovate the heritage of Echizen craftsmanship.
Steel Introduction:
SG-2 / R2 Powder Steel contains:
Carbon 1.25–1.50% / Chromium 14.0–16.0% / Molybdenum 2.0–3.0% / Vanadium 1.8–2.5% / Tungsten 1.5%
These elements give SG2 very high hardness, excellent edge retention, strong corrosion resistance, and good toughness.
After proper heat treatment, hardness typically reaches HRC ≈62–64.
With high chromium content and exceptional performance, SG2 is highly favored by chefs and knife enthusiasts seeking premium cutting performance.
Knife Model Introduction:
Bunka (Kensaki Santoku) is an all-purpose knife designed to cut meat, vegetables, and fruits.
It is a variation of the Santoku, featuring a k-tip (kensaki) profile that enhances tip usability and versatility.
