⭕️Morihiro Kaji Koujou was founded in 1961 and is now led by second-generation master Yasuaki Taira. Despite being relatively young compared to traditional Sakai makers, the workshop is highly respected for its exceptional forging and sharpening quality. All knives are handcrafted start to finish by Taira himself, known especially for his signature Choji hamon. Due to extremely limited production, wait times can span several years.

⭕️Hon-Yaki:
Hon-Yaki is a traditional Japanese forging method using a single piece of high-carbon steel. Differential hardening is achieved through clay tempering, resulting in a very hard edge and a tougher spine. The process has a high failure rate, making these knives rare, highly valued, and often considered functional works of art.
