Brand Introduction:
⭕️Morihiro Kaji Koujou was founded in 1961 and is now led by second-generation craftsman Yasuaki Taira. Despite being younger than many century-old Sakai workshops, it has earned a strong reputation for exceptional forging and sharpening techniques. Each knife is fully handcrafted by Taira himself, featuring his signature Choji hamon. Due to limited production, wait times can extend for years.
⭕️Yasuaki Taira personally handles every step—from forging and heat treatment to final sharpening—ensuring absolute precision and craftsmanship. His knives are regarded as both high-performance tools and collectible works of art.
Material Introduction:
⭕️Hon-Yaki (Water-quenched mono steel):
A traditional Japanese forging method using a single piece of high-carbon steel. Through clay tempering, the edge achieves extreme hardness while the spine retains toughness. This process is highly difficult with a high failure rate, making each knife rare and highly valued.
Knife Model Introduction:
⭕️Kiritsuke Yanagiba:
A hybrid of traditional Yanagiba with a pointed Kiritsuke tip, offering enhanced precision and versatility. Ideal for slicing sashimi and sushi ingredients, it delivers clean cuts while allowing more intricate control.
