Brand Introduction:
⭕️Morihiro Kaji Koujou was founded in 1961 and is now led by 2nd-generation blacksmith Yasuaki Taira. Although younger than many century-old Sakai brands, Morihiro is widely respected for its forging and polishing expertise. Taira personally forges and finishes each blade. Known for its unique choji hamon and hand-written certificates, production is extremely limited with wait times up to several years.
Steel Introduction:
⭕️Hon-yaki (water-quenched) is a traditional and highly demanding forging method using a single piece of high-carbon steel. Clay tempering selectively hardens only the edge during quenching, resulting in a blade with extreme hardness at the edge and retained toughness in the spine. These knives are known for superior performance and longevity, often regarded as functional art pieces.
Knife Type Introduction:
⭕️Yanagiba (Sashimi Knife) is a long, narrow Japanese slicing knife designed for clean, precise cuts of raw fish and sashimi. The Kengata (sword-tip) variant adds a striking visual and functional edge geometry, favored by professionals seeking both aesthetics and performance in fine slicing tasks.
