Brand Introduction
Nitoh Hamono, located in Hirosaki City, Aomori Prefecture, Japan, has over 350 years of knife-making history and is renowned as a premier maker of samurai swords. Now in its eighth generation, the dark pattern series, including the famous Onikiri and Fuji Tsuki Hon-yaki, showcases Japan’s exceptional metal craftsmanship. Tradition and innovation blend perfectly, producing knives with outstanding performance and exquisite design.
Material Introduction
SG-2/R2 Powder Steel: Composition: Carbon (C): 1.25-1.50%, Chromium (Cr): 14.0-16.0%, Molybdenum (Mo): 2.0-3.0%, Vanadium (V): 1.8-2.5%, Tungsten (W): 1.5%.
This composition offers very high hardness and excellent corrosion resistance while maintaining sufficient toughness. After proper heat treatment, hardness is usually between HRC 62-64, ensuring long-lasting sharpness and wear resistance. High chromium content enhances corrosion resistance, making SG2 a highly recommended steel for chefs and knife enthusiasts seeking top performance.
Knife Model Introduction
Western Kiritsuke knives are specialized for cutting meat, especially beef. They feature a straight blade and a pointed tip, ideal for slicing and cutting large chunks of meat. The longer blade allows clean cuts without sawing, preserving the integrity and appearance of meat slices. Handles are designed for prolonged use and are typically made of wood, plastic, or composite materials, providing comfort and control. This knife is a staple in many Western kitchens and professional chef toolkits, also suitable for home cooks who frequently handle meat.
