🔸Brand Introduction:
Founded in 1955, Tojiro set out to change the stereotype that stainless steel knives were of low quality. They pioneered stainless steel blades that were razor-sharp and durable, becoming one of the few remaining Japanese knife brands that uphold traditional forging values while embracing industrial precision.
Located in Tsubame City, Niigata—Japan’s renowned metalworking hub since the Edo period—Tojiro fuses ancient craftsmanship with modern manufacturing. Using multi-layer steel and stamping techniques derived from katana forging, they deliver performance-grade kitchen knives with unmatched consistency.
Tojiro continues to believe that human skill and experience are essential to creating knives that chefs truly bond with. With every blade, they uphold their mission of producing tools that are not only sharp, but reliable companions in the kitchen.
🔸Steel Introduction:
VG10 stainless steel contains approximately 1.0% carbon, 15.0% chromium, 0.2–0.3% vanadium, 1.0% molybdenum, and 1.5% cobalt. This combination ensures outstanding hardness, corrosion resistance, and edge retention. The HRC typically ranges from 60–62, offering both excellent sharpness and sufficient toughness. High chromium levels make VG10 well suited for kitchen environments prone to moisture and acid exposure.
🔸Knife Model Introduction:
Nakiri knives are purpose-built for cutting vegetables. The flat, rectangular blade excels at slicing, chopping, and push-cutting cleanly through produce, making it a practical and popular choice in home kitchens.
